When The Family Feuds, Make Them Family Drama Carnitas
Clashing political views. Less-than-ideal sleeping situations. Your brother-in-law's newest "investment opportunity" pitch. Gift cards when you could really just use some cash.
The holidays will push both your fridge capacity and your patience to the brink, and, while we can't get your grandpa to stop talking about how much you've "filled out," we can suggest a coping strategy with a pretty high success rate: A high-ABV pilsner and some roasted fatty meat:
Family Drama Pulled Pork Carnitas
Ingredients:
1 1/2 tablespoons salt
1 teaspoon black pepper
2 lb. pork butt, cut into 4-inch cubes
2 tablespoons coconut oil
1/2 medium onion, roughly chopped
3 cloves garlic, minced
1/2 teaspoon chili powder
1/4 teaspoon ground cinnamon
Juice of 1/2 lime
1 cup Family Drama Imperial Pilsner
Directions:
Preheat oven to 350 degrees.
Mix 1 tablespoon salt and pepper in small bowl. Use to season pork butt evenly.
In a heavy pot, melt the coconut oil over medium heat, swirling to coat the pan. When fat is hot, add the pork. Brown on all sides (about 3 minutes per side). Remove from pot. Set aside.
Reduce heat to medium-low, and add onion. Cook while stirring about 4 minutes until translucent. Add garlic and stir vigorously to prevent burning for about 1 minute. Add beer, chili powder, and cinnamon. Increase heat to medium-high, and return pork to pot. Bring to a boil.
Cover pot with lid, and transfer to oven. Bake for 2 1/2 hours, turning meat after each hour. Pork will be fork-tender when done.
Shred pork with a fork, discarding any excess fat. Incorporate cooking liquid, and add the lime juice. Season with 1/2 tablespoon salt.
Wrap in a tortilla, put it on a bun, or eat it by the handful. No judgment.
